Healthy Glazed PB Choco Donut Gains | Erin Stern

December 18, 2018

Clean eating can be tough, but it isn’t impossible. I’ve found that by making clean treats, I have less cravings for the truly unhealthy stuff. These donuts are great for a snack, or for a post-workout meal. They’re high in protein and fiber, which means they’ll keep you feeling full and satiated longer. Whip these up in 30 minutes or less!

Glazed PB Choco Donut ingredients:

  • ¾ c all purpose flour
  • ¼ c powdered peanut butter
  • 2 scoops chocolate ISO protein powder
  • ¼ c granulated sugar substitute (Swerve is great)
  • 1 teaspoon baking powder
  • 2 TBSP coconut flour
  • 1 large egg
  • 1 container fat free Greek yogurt
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract

Glaze ingredients:

  • ¼ c powdered peanut butter
  • 1 scoop chocolate ISO protein powder
  • 1-2 tsp water

  1.  Preheat oven to 350.
  2.  In a large bowl, mix all dry ingredients well. In another large bowl, combine wet ingredients and mix well. Slowly pour dry ingredients into bowl of wet ingredients. Mix until just incorporated. Do not over-mix, as the donuts will be rubbery. If the batter is really thick, add 1 tbsp of water.
  3.  Spray donut tin with nonstick cooking spray.
  4.  Spoon batter into each recess, filling until batter almost reaches the edge
  5.  Bake for 11-13 minutes. Donuts taste better slightly undercooked. Let cool for 10 minutes.
  6.  While the donuts are cooling, mix powdered peanut butter, protein powder and 1tsp water. If glaze looks too thick, slowly add more water until consistency is reached.
  7.  Remove donuts from tin and spoon glaze over the top.
  8.  Enjoy!

I love packing 2 of these donuts for a post-workout snack. They’re portable, have great macros, and can crush cravings!
